tired

I know I haven't been great about posting lately. I do feel much better than I did in the early weeks of this pregnancy, but I still have some lingering fatigue.

I've finally thrown in the towel as far as Project 365 goes. I will still participate but no longer try to keep up. However many I take this year will have to be enough. =) Of course, once the new baby is here I'll probably have more than enough pics.

With our warmer weather, I hope to have more pics AND posts up soon.

recipe


I tried out a great new recipe this week, from one of my older Quick Cooking cookbooks. It's called Shrimp Taco Salad. Very quick and easy to make and the kids loved it. I didn't add the coriander, though, as I didn't have any and I used 6 tortillas instead of 3.


Shrimp Taco Salad

1 pound uncooked large shrimp, peeled and deveined

1 envelope taco seasoning, divided

1/2 cup plus 3 tablesppons olive or vegetable oil, divided

1 small onion, finely chopped

3 tablespoons cider or red wine vinegar

2 tablespoons diced green or sweet red pepper

6 garlic cloves, minced

1/2 teasoon ground coriander

1/4 teaspoon sugar

3 corn tortillas (6inches) cut into 1/4-inch strips

1 package (8ounces) ready-to-served salad greens

1 medium tomato, chopped

1 can (8ounces) black beans, rinsed and drained

2 cups (8ounces) finely shredded Colby/Monterey Jack cheese

Remove shrimp tails if desired. Place shrimp in a bowl; sprinkle with half of the taco seasoning. Set aside. In another bowl, combine 1/2 cup oil, onion, vinegar, green pepper, garlic, coriander and sugar; set aside. In a skilled, stir-fry tortilla strips in remaining oil; drain on paper towels. Sprinkle with remaining taco seasoning. In the same skillet, saute shrimp for 8-10 minutes or until pink. In a large bowl, combine the greens, tomato, beans, shrimp and tortilla strips. Drizzle with dressing. Sprinkle with cheese; toss.

6-8 servings.

singing for the Lord



Brenna takes part in a music class called His Kids. It's at a nearby church, and they meet each Sunday afternoon. They learn music theory, bible verses and practice for a performance that they put on twice a year. The spring performance was last night. It had an Olympic theme, interwoven with a great message about talking to people about Jesus.


Brenna is in the back row on the end, wearing green. The boy in front with the fake muscles was the main character -- an Olympian from Finland. So he had to do an accent -- he did great! We all walked around saying, "Ya" afterward.


Brenna had a small singing solo and a speaking part. She was a bit nervous at first, but delivered well. Terrific job, Brenna!

Next year Aiden will be old enough to join the group also.

enjoying the weather

The weather has been just gorgeous the last few days. So Scott pulled out the bikes today. This was Zane's first ride in the bike trailer and I'd say he liked it. =)

update

This morning Aiden was running just a low-grade fever and said he felt much better. He even had the energy for a bike ride with Dad.





Unfortunately, this afternoon he started feeling poorly again and is back on the sofa.

I'm official now

I tend to wait awhile into each pregnancy to visit the doctor. My first 2 pregnancies I went in very early and it seemed to make the pregnancy drag out longer, and I know there's not much the doctor can do in the first weeks anyway.

So today I finally had my first OB appt since we found out we were expecting. I'm right at 13 weeks, and was given a due date of October 20. Which, with my track record, means about a week later. =)

It was wonderful to be able to hear the heartbeat today. It's always a scary moment for me while the nurse searches. But what joy when I hear the loud galloping!

I feel so blessed that God has given us another child.

my lunch

We had a speaker at MOPS last week who showed us how to make some great, easy meals. One was these pita melts:



This one is just cubed chicken breast, chopped tomatoes, mozzarella cheese and Italian herbs. She also put olives on hers, but I didnt.


This is more like a dessert pita. Brush the pita with butter, then add thinly sliced apples, cinnamon & sugar and cheddar cheese. Yummy! I shared this one with the kids and they all really liked it.

Her other ideas for pita melts were:

pepperoni pizza
garden veggie pizza
tuna melt
breakfast pie

These are so easy and quick. You just put them into a toaster oven at 375 degrees for 5 minutes. I used my oven and increased the time to 12 minutes.
